I've had this massive craving for chocolate chip muffins for weeks, and finally got down to making these. These are the most awesome chocolate chip muffins i've ever tasted - fluffy, moist and simply delicious.
The chocolate chips stayed suspended in the top and middle of the batter and did not settle to the bottom. Every bite is filled with chocolatey goodness. They are also really easy to make, taking about 30 minutes from start till end.
I took a bite out of one of these right out of the oven, with the chocolate oozing out, the sides and top crusty with buttery, sugary goodness, so yummy! If you do make these, i hope you enjoyed them as much as i did!

INGREDIENTS 113g (1/2 cup) butter 150g (2/3 cup) caster sugar 2 teaspoons baking powder 1/2 teaspoon salt 1 teaspoon pure vanilla extract 1/2 teaspoon ground cinnamon 2 eggs 115g (1/2 cup) milk 240g (2 cups) all-purpose flour 255g (1 1/2 cup) chocolate chips Brown sugar or coarse white sugar, for topping |

METHOD Preheat oven to 180°C (350°F). Line a 12 cup muffin pan with paper liners or spray the wells of the pan with non-stick cooking spray. In a large mixing bowl beat the butter, sugar, baking powder, salt, vanilla, and cinnamon until fluffy. Beat in eggs, then stir in the milk. Mix in the flour, then the chocolate chips. Divide the batter evenly into the prepared muffin pan. Sprinkle the tops with a little brown or coarse sugar. Bake the muffins for 20 minutes, or until a cake tester inserted into the center of one comes out clean (a few crumbs or chocolate is ok). Remove muffins to a wire rack and cool for at least 5 minutes. Serve warm or at room temperature. | |
NOTES These muffins are best served the day they are made; but i've eaten them on the second and third day and they still taste good. Leftovers can be stored in an airtight container at room temperature for up to 3 days. I recommend warming them up in the microwave for about 30 seconds before eating/ serving. | |
